The annual Salon de Sucre et Chocolat is this weekend, kicking off the holiday season with the best pastry chefs around. Chef Christian Cottard, who organises the show, "battles" to find the most talented and traditional pastry chefs and showcase their talents at this salon. He told Riviera Insider that traditional French pâtisserie is a dying art and the Salon de Sucre et Chocolat is his way to honour those who still do things the traditional way.
