Club Vivanova: fusion dining at La Vague de St Paul

Provence meets southeast Asia in the kitchens of La Vague de St Paul. Copyright La Vague de St PaulBradley Mitton and the Club Vivanova are to host an evening of dégustation and fusion dining at countryside hotel La Vague de St Paul in early April. The evening includes a four-course fusion menu by executive chef of the four-star hotel, Akhara Chay, as well as a tasting of three premium New World wines – a speciality of Bradley – and live entertainment at the rural property.

Chef Akhara Chay apprenticed with Alain Ducasse at the Park and St James in Paris, and joined his mentor, chef Éric Provost, at the Royal Barrière in Deauville after which he moved to Le Mas Candille in Mougins as second chef alongside Serge Gouloumès.

His gourmet style mixes Provençal flavours with those of his Cambodian and Thai origins. His four-course menu will be paired with the Australia Two Brothers Organic Sauvignon Blanc, New Zealand Sliding Hill Sauvignon Blanc and Argentinean Rewen Estate Malbec for a truly ‘international gourmand experience’.

The event is taking place on Friday 7th April from 8pm to 11pm at La Vague de St Paul (Chemin des Salettes, Saint-Paul-de-Vence). Attendance costs 75€ per person (fully inclusive) for the evening, but Club Vivanova is also offering a package including an overnight stay with breakfast for two in one of the hotel’s luxury suites for 240€.
