As soon as the sunny days of a promising season arrived on the Croisette, the Grand Hyatt Martinez’s beach - Zplage - unfurled its parasols and unfolded its deckchairs. Health and nutrition are the focus of chef Christian Sinicropi’s new menu, which blends traditional produce of the Mediterranean with international accents to tantalise the taste buds.
“This is a multi-cultural cuisine offering a choice of wok specialties and tandoori kebabs,” says the chef, who takes special care to use seasonal produce sourced locally and from organic producers wherever he can. “Without forgetting the wild fish of the Mediterranean cooked over a wood fire!”
Entrées include: king crab and gazpacho with turmeric, tarragon and yoghurt (56€); bonito, prawn and octopus ceviche (36€); and Sicilianstyle calamari with basil, ginger, pecorino and lime (32€). From the tandoori oven: king prawn skewers with a lime-yoghurt dressing and coriander leaves (46€) or tarragon-infused lamb skewers with pepper (44€). In the wok: Angry Chili Beef of Black Angus, Thai basil and vegetables stir-fried in soy (49€) and Zen White Tiger with gambas sautéed in a sesame oil and sprinkled with lime and coconut (42€). Freshly caught fish and charcoal-grilled meats also have their place on the extensive carte as well as light and refreshing desserts and juices.
Throughout July and August, this elegant address also plays host to the famous Znight evenings with live music by DJ Maggy Smiss.
A lunch menu comprised of the dish and dessert of the day is 39€ while a lounger and towel costs 33€ per day.
